It’s about a simple philosophy: let time and simple ingredients do the work for you. I’m going to share a recipe that looks and tastes like a special occasion meal but is so easy, you’ll feel like you’re cheating. Get ready to have your mind changed.

The “Impressive But Easy” Philosophy

The most impressive flavors often come from the simplest methods. In this case, we’re going to use a classic technique: braising. Braising is just a fancy word for cooking something low and slow in a little bit of liquid. This process makes the meat incredibly tender and infuses the vegetables and sauce with a deep, rich flavor that feels complex but requires very little effort.

The best part? It’s a one-pot meal, which means cleanup is a total breeze.

My One-Pot Braised Chicken & Chickpeas

This recipe is my go-to for a perfect, impressive dinner that I can set and forget. The chicken becomes fall-off-the-bone tender, and the chickpeas soak up all the delicious, savory flavor.

What you’ll need:

  • 2 lbs bone-in, skin-on chicken thighs
  • 1 tbsp olive oil
  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1 can (14.5 oz) crushed tomatoes
  • 1½ cups chicken broth
  • 1 tsp dried oregano
  • 1 tsp paprika
  • ½ tsp cumin
  • Salt and black pepper to taste
  • Chopped fresh parsley for serving

The How-To:

  1. Sear the Chicken: Pat the chicken thighs dry with a paper towel and season them generously with salt and pepper. Heat the olive oil in a large pot or Dutch oven over medium-high heat. Place the chicken thighs in the pot skin-side down and cook for 5-7 minutes, until the skin is golden brown and crispy. Remove the chicken from the pot and set it aside.
  2. Build the Flavor Base: Reduce the heat to medium. Add the chopped onion to the pot and cook for about 5 minutes, until it’s soft and translucent. Add the minced garlic and cook for one more minute until it’s fragrant.
  3. Add the Liquids & Spices: Pour in the chicken broth and use a wooden spoon to scrape up any browned bits from the bottom of the pot—this is where a lot of the flavor lives! Stir in the crushed tomatoes, dried oregano, paprika, and cumin.
  4. Add the Good Stuff: Add the rinsed chickpeas and give everything a good stir. Now, nestle the chicken thighs back into the pot, skin-side up.
  5. Braise & Wait: Bring the mixture to a simmer, then reduce the heat to low, cover the pot, and let it braise for 30-40 minutes. The chicken should be cooked through and incredibly tender.
  6. Serve: Ladle the braised chicken and chickpeas into bowls. Garnish with fresh parsley and serve it with crusty bread, couscous, or rice.
